Hawaiian rolls loaded with chicken tikka, smothered with cheese, and baked to absolute perfection.
Cut chicken into bite sized pieces. In a bowl, add chicken pieces, ginger garlic paste, yogurt, lemon juice, 2 tbsp olive oil, salt, black pepper, paprika, cumin, coriander, garlic powder, chili powder, nutmeg, turmeric, cinnamon, and orange food colouring (optional). Mix well, cover, and place in fridge to marinate for 1 hour.
After 1 hour, heat 1 tbsp olive oil in a pan over medium high heat. Add chicken pieces and allow chicken to cook through, mixing occasionally. Cook chicken in batches.
Once chicken has been cooked, add all the chicken back to the pan. Add the sliced onions to the chicken and mix well. Allow onions to cook for about 1 minute, then remove pan from heat and set aside.
Prepare a baking dish that will fit all the rolls in one layer. You can line the dish with parchment paper or grease the dish with butter/cooking spray.
Leaving the rolls attached to each other, slice the rolls as evenly as possibly, horizontally. A serrated knife works best for this. Remove the top layer of rolls and gently set aside.
Gently place the bottom layer of rolls into the prepared baking dish. Spread the mayonnaise evenly onto the bottom layer.
Next, evenly spread the chicken tikka mixture over the mayonnaise.
Next, sprinkle the shredded cheese over the chicken. Then sprinkle finely chopped cilantro over the cheese.
Gently place the top layer of rolls over the cheese/cilantro layer, pressing down gently. Brush the top with melted butter and sprinkle chopped cilantro over top for garnish.
Bake in an oven preheated at 350F for 15 minutes or until cheese is melted and tops are toasty. Pull apart, serve, and enjoy!
