Ingredients
1 lb chicken thighs, boneless & skinless (cut into small bite size pieces)
2 tbsp ginger garlic paste 
1⁄4 cup plain yogurt
2 tbsp lemon juice
2 tbsp olive oil + more for cooking
1 tsp salt
1⁄2 tsp black pepper
1 1⁄2 tsp paprika
1 tsp ground cumin
1 tsp ground coriander
1 tsp garlic powder
1 tsp chili powder, or to taste
1⁄4 tsp ground nutmeg
1⁄4 tsp turmeric
pinch cinnamon
1 drop orange food colouring (optional)
1⁄2 small onion, sliced
1 12-pack Hawaiian rolls
3 tbsp mayonnaise, or to taste
170 g mozzarella cheese, shredded
2 tbsp cilantro, finely chopped ((more for garnish))
1 tbsp butter, melted (salted or unsalted)

Ramadan recipes: the most delicious, old-fashioned Ramadan recipes: the most delicious, old-fashioned Beef and Barley soup that is packed with SO MUCH flavour. Hearty and nutritious, this beef barley soup recipe is made with succulent chunks of beef, tender vegetables, and nutty barley. This delicious beef soup is perfect to warm up on a cold fall or winter day.

Ingredients
3 + 1 tbsp olive oil
2 lbs beef chuck roast, boneless (cut into 3/4-1 inch cubes)
1 large (about 1 cup) onion (diced)
4 med (about 2 cups) carrots, peeled (sliced or diced)
3 stalks (about 1 cup) celery (sliced)
4 cloves garlic (minced)
1 1⁄2 tbsp tomato paste
6 cups beef stock, warmed
1 cup water, hot
1 tbsp soy sauce
2 bay leaf
4 sprigs thyme, fresh
1 tsp oregano, dried
1⁄2 tsp black pepper
salt, to taste
1 cup pearl barley (rinsed and soaked for 30 minutes)
parsley, finely chopped (for garnish)
Instructions
1.	With a paper towel, pat the chunks of beef dry. Season beef generously with salt. 
2.	In a large pot, heat 3 tbsp of olive oil over medium high heat. Place beef chunks in heated oil, being sure not to overcrowd the pot (you will most likely have to cook the beef in batches). 
3.	Sear the beef on one side for 3 minutes, flip and sear for another 1-2 minutes. 
4.	Remove beef from pot onto a plate and repeat process until all beef has been seared. 
5.	In the same pot that is now empty, add another 1 tbsp of olive oil and allow to heat up. Add the onions, carrots, and celery to the pot and cook for about 5 minutes, stirring occasionally. 
6.	Add the garlic and tomato paste and cook down for another 1 minute. 
7.	Add back in the seared beef, beef stock, hot water, and soy sauce. Mix well and allow to come up to a boil. 
8.	Add the bay leaves, thyme, dried oregano, and black pepper. Reduce heat to low, cover, and allow to simmer for 1 hour.
9.	Add the drained barley to the soup, mix, cover, and cook for another 45-60 minutes, or until beef and barley are tender. 
10.	Fish out bay leaves and thyme sprigs with a fork or tongs. Taste and adjust for salt. Mix in chopped parsley. Serve.

This light, but hearty Red Lentil Soup is seasoned This light, but hearty Red Lentil Soup is seasoned to perfection using warming spices and fresh herbs. It is packed with nutritious vegetables and tastes amazing! This soup makes a great lunch, appetizer, and is popularly served for iftar during Ramadan.

Instructions
1 1⁄4 cup red lentils, rinsed until water runs clear (allow to soak until ready to use)
3 tbsp olive oil
1 large onion, diced
2 medium carrots, diced
1 stalk celery, diced
4 cloves garlic, minced
3 sprigs thyme
2 tbsp tomato paste
1 tsp dried oregano
1 1⁄2 tsp ground cumin
1 tsp paprika
1⁄4 tsp black pepper
1 tsp salt
3 bouillon cube (vegetable or chicken)
8 cups hot water
lemon juice, freshly squeezed (garnish)
cilantro or parsley, finely chopped (garnish)
chili flakes (garnish)
Instructions
1.	Rinse the red lentils until the water runs clear. Place the lentils in a bowl, fill with water about 1 inch over the lentils, and let it soak until ready to use. 
2.	In a Dutch oven or any soup pot, heat the olive oil over medium high heat. Add the onions, carrots, and celery, stirring occasionally until they are soft and translucent, about 5 minutes. 
3.	Add the garlic and thyme and cook for 1 minute. 
4.	Add the tomato paste, dried oregano, ground cumin, paprika, black pepper, salt, and bouillon cubes. Stir for about 30 seconds, breaking up the bouillon cubes at the same time. 
5.	Drain the water from the lentils and add the lentils to the pot. Stir until combined. The extra water from the lentils should help lift up what's stuck at the bottom of the pan. 
6.	Add the 8 cups of water, stir, and bring to a boil. 
7.	Reduce heat to medium-low, cover, and allow the soup to simmer for 30 minutes, or until lentils and carrots are tender. Give the soup a stir occasionally, removing any scum off the surface of the soup if necessary. 
8.	Use an immersion blender to blend the soup until smooth. 
9.	Taste the soup and adjust for salt. 
10.	Serve the soup with a squeeze of lemon juice, and a sprinkling of cilantro/parsley + chili flakes. Enjoy!
