Blueberry Orange Muffins
If you love blueberry muffins then I’m pretty sure you’re going to love these Blueberry Orange Muffins. They are a perfect fusion of your classic blueberry muffin and an orange cardamom cake. I’m pleasantly surprised at how well cardamom goes with blueberry and orange – perfection!
These muffins are perfect as a snack, on-the-go breakfast, or even dessert! They’re so simple and if you follow this recipe you will get those perfectly high tops that everyone looks for in a muffin.

Key Ingredients
Along with the typical ingredients needed to make moist blueberry muffins, here are a few other important ones.
Cardamom: I don’t know what it is about this combination, but cardamom paired with orange is unmatched. You can buy cardamom powder or use cardamom pods (which you’ll then need to grind into a fine powder).
Orange zest + granulated sugar: my recipe instructs you to rub the orange zest into the granulated sugar with your hands, which gives the finished baked good a stronger citrus taste.
Orange juice: adds to the flavour of the muffins and helps moisten the muffins.
Blueberries: can’t have blueberry muffins without blueberries.
How to Make Blueberry Orange Muffins
Rub the granulated sugar and orange zest together with your hands.

Add the softened butter and beat using a mixer for a few minutes.

Add eggs one at a time, beating after each addition until JUST combined. Add vanilla, orange juice, and milk and beat until combined.

After mixing the dry ingredients together in a separate bowl, add it into the wet ingredients in 2 parts, mixing gently.

Fold in the blueberries. I discovered I prefer using fresh blueberries as they don’t cause the batter to change colour like the frozen ones do. Cover tightly and allow the batter to rest at room temperature for 30-60 minutes. Halfway through the resting time, preheat the oven to 425F.

Scoop the batter into the greased and lined muffin pan. Note: do not mix the batter after it has rested, just simply begin scooping the batter gently into the cups. If you want those high tops, fill the cups basically to the top, and even a little more if you can. That’s why it’s important to also grease the top of the pan.

Bake in the preheated oven for 7 minutes. Then, reduce the heat to 350F and bake for an additional 10 minutes. At this point, check doneness using a toothpick.
Tips for Bakery-Style Muffins
You can achieve high-topped bakery-style muffins by following these simple tips:
- Fill the muffin cups up to the very top, and even a bit more if you can. This will give the muffins the substance they need to get a beautiful high top. Sometimes, not filling the muffin cup enough results in a muffin top that is flatter than you’d like.
- Mix the batter until JUST combined. Overmixing will remove the trapped air which we need to make the tops rise. You’ll get dense muffins that don’t rise properly. So always mix until JUST combined.
- Let the batter rest. This is the easiest thing you can do and it can really help get a good rise. Many bakeries do this step to achieve the classic bakery-style muffin. Let your batter rest for at least 1 hour for the best results. The longer the better. You can let the batter rest in the fridge overnight (cover properly) or at room temperature for an hour. When you’re ready to scoop the batter into the muffin cups, do not mix the batter first. Simply just start scooping. Resting the batter allows structure to form, which results in higher tops.
- Fill every other cup in the muffin pan. This allows for better air circulation and more space for each muffin to rise.
- Use a muffin pan that has bigger cups compared to a standard muffin pan. Bakery-style muffins are bigger in general and more batter means more structure for a good rise.

Line a muffin pan with liners. Also, grease the top of the muffin pan. Set aside.

In a bowl, sift together all-purpose flour, baking powder, baking soda, ground cardamom, and salt. Set aside.

In a large bowl, rub together the granulated sugar and orange zest to release oils from orange peel. The sugar will become yellow in colour.

Add the softened butter and beat using a hand mixer for a few minutes, until the mixture has become creamy and pale in colour. It will take about 3-5 minutes.

Add eggs one at a time, beating after each addition, until just combined.

Add vanilla extract, orange juice, and milk and beat until just combined.

Add the flour mixture in 2 parts, mixing after each addition. Be sure not to overmix.

Gently fold in the blueberries until just combined.

Cover and let the batter rest at room temperature for 30-60 minutes. Halfway through the resting period, preheat the oven to 425F.

Scoop the batter into the muffin cups into every other cup (do not mix the batter, simply just scoop and fill). Fill it right to the top and a bit more to get a really good rise.

Bake in preheated oven for 7 mins, then reduce heat to 350F and bake for an additional 10 minutes. Do not open the oven door during this time. Once the 17 minutes is up, use a toothpick to check doneness.

Remove from oven and let cool for 5 minutes, then remove from pan and continue to cool on a cooling rack.
