Tasty fritters made with ground chicken, shredded zucchini, and the perfect amount of aromatics and spices.
Prepare the zucchini: shred the zucchini and place in a bowl or plate. Sprinkle 1 tsp of salt over the zucchini and mix. Leave it for 10 minutes.
After 10 minutes, squeeze the zucchini between your hands or use a strainer/cheesecloth to squeeze the liquid out of the zucchini. Place the squeezed zucchini into a large bowl.
Mix: to the zucchini, add the ground chicken, garlic, green onion, egg, salt, black pepper, and paprika, and mix everything together well.
Fry: heat a pan over medium heat. Once hot, add enough olive oil to the pan, about 1/4-1/2 inch high.
Spoon the mixture into the hot oil. Each fritter should have about 3 tbsp of mixture. Flatten the fritters to about a 1/2 inch thick circle. Cook for about 3 minutes on each side, or until cooked through. Drain on a paper towel.
Make the dip: mix all the dip ingredients together and serve with the fritters.
