Chicken Zucchini Fritters

Chicken Zucchini Fritters – little tasty patties of meat and vegetables, making the perfect snack or lunch. These little zucchini fritters are bursting with flavour and pair so well with the yogurt dip. They are so good that even my kids love them – they are finished in minutes!

I love this recipe because it’s something I don’t need to feel guilty over, but they are absolutely delicious! Not only that, but they literally take 15 mins of prep time and 15 mins of cook time, so you’ll have a healthy lunch or snack in as little as 30 mins. Awesome!

Lately, I’ve been more mindful of the foods that I’m eating, but still ensuring that it tastes good. These zucchini fritters checks all the boxes!

Ingredients Needed

Chicken: ground chicken keeps these fritters light but filling, and adds protein.

Zucchini: adds a sweetness and earthiness to the fritters, as well as fiber!

Egg: helps bind all the ingredients together.

Aromatics: garlic and green onions add extra flavour.

Olive oil: used to fry the chicken zucchini fritters, which is healthier than using seed oils.

How to Make Zucchini Fritters

These Chicken Zucchini Fritters couldn’t get any easier. Here’s how to make them!

Shred the zucchini (including the skin) and place into a bowl. Sprinkle 1 tsp of salt over the shredded zucchini and mix well. Leave this for 10 minutes. The zucchini will start to release liquid with the help of the salt.

After 10 minutes, using your hands or a strainer/cheesecloth, squeeze as much liquid as you can out of the zucchini. Place the squeezed zucchini into a large bowl and discard the liquid.

Add the ground chicken, garlic, green onions, egg, salt, black pepper, and paprika to the zucchini.

Mix until all of the ingredients are thoroughly combined.

Heat a pan over medium heat. Once hot, add enough olive oil (it should be about 1/4 to 1/2 inch high). The exact amount will be different depending on the size of your pan, which is why I didn’t include an amount.

Spoon the mixture into the hot oil. Each fritter should contain about 3 tbsp of the mixture. Flatten the fritters out slightly to ensure even cooking. The thickness should be about 1/2 inch.

Cook for about 3 minutes before flipping to the other side.

Cook for another 3 minutes or until cooked through. Remove and drain on a paper towel.

To make the dip, just mix the Greek yogurt, olive oil, lemon juice, salt, black pepper, and dill together and serve with the fritters.

Variations

These zucchini fritters are already spectacular as is, but if you wanted to change things up, here are some tips:

  • Add carrots: replace one of the zucchini with a medium shredded carrot. You’ll like this if you love carrots or just want to add another element of sweetness to the fritters. It also adds some more colour! Yellow zucchini is also a good one.
  • Experiment with other vegetables: eggplant, corn, potatoes, or cucumbers are nice options.
  • Add your favourite spices: you can spice your fritters up with your favourite spices, such as oregano, cayenne pepper, garlic powder, onion powder, etc. I wanted to keep this recipe simple with just a few spices and it still tastes amazing!
  • Keep it vegetarian: omit the ground meat if you just want to keep it vegetarian. It absolutely tastes just as good without!
  • Make a sandwich: if you want to use these fritters as a more filling food, make a sandwich out of them. Use your choice of bun and toppings, and voila, you have a hearty lunch or dinner.
  • Add cheese: if you want to spruce it up some more, add some shredded cheese to the uncooked mixture to give it some melty goodness.

Can I use other types of meat?

Yes you can, as long as it’s ground. Ground beef, lamb, or turkey are great options.

Instructions

  1. Prepare the zucchini: shred the zucchini and place in a bowl or plate. Sprinkle 1 tsp of salt over the zucchini and mix. Leave it for 10 minutes. 

  2. After 10 minutes, squeeze the zucchini between your hands or use a strainer/cheesecloth to squeeze the liquid out of the zucchini. Place the squeezed zucchini into a large bowl. 

  3. Mix: to the zucchini, add the ground chicken, garlic, green onion, egg, salt, black pepper, and paprika, and mix everything together well. 

  4. Fry: heat a pan over medium heat. Once hot, add enough olive oil to the pan, about 1/4-1/2 inch high. 

  5. Spoon the mixture into the hot oil. Each fritter should have about 3 tbsp of mixture. Flatten the fritters to about a 1/2 inch thick circle. Cook for about 3 minutes on each side, or until cooked through. Drain on a paper towel. 

  6. Make the dip: mix all the dip ingredients together and serve with the fritters.
