Salmon fillets smothered and baked in a honey soy ginger sauce. Serve with rice, topped with green onions and sesame seeds.
In a bowl or ziploc bag, mix together the honey, soy sauce, grated ginger + garlic, extra-virgin olive oil, and sesame oil.
Add the salmon fillets into the marinade and mix gently to coat the salmon well.
Place the salmon in the fridge and allow to marinate for 15-30 minutes.
While the salmon is marinating, preheat the oven to 375F and line a baking dish with parchment paper or aluminum foil. A baking dish that is smaller in size that fits the salmon fillets without crowding is perfect. This will prevent the sauce from drying out and result in more juicy fillets.
Place the marinated salmon fillets onto the lined baking dish with some space between each fillet. Pour the remaining sauce over the fillets.
Place the salmon into the preheated oven and bake for 18-25 minutes, depending on how thick the fillets are. The internal temperature of the salmon should be 145F when fully cooked.
(Halfway through cooking, spoon the sauce from the baking dish over the salmon.)
Remove the baking dish from the oven and allow the salmon to rest for 5 minutes.
Serve with rice and your choice of vegetables. Garnish with sliced green onion and sesame seeds. Also tastes amazing with a drizzle of spicy mayo!
