In a small saucepan over medium-high heat, mix together the water and the sugar, just until all the sugar has dissolved.
Remove from heat and transfer to a heat-proof jar. Allow to cool.
Once sugar-water mixture is cool, add the lime juice and mix until thoroughly combined.
Pour into popsicle molds, leaving about 1/4 inch space at the top. Cover and insert popsicle sticks. Freeze for at least 4-6 hours before enjoying.
Makes approximately 6-8 popsicles.
Blend the lime juice, coconut milk, condensed milk, and vanilla extract together for 5-10 seconds.

Puree the strawberries in a blender. Add honey, if needed, to your desired sweetness and blend until combined. Set aside.
In a bowl, mix together the lime juice, vanilla Greek yogurt, and honey until combined (add honey to your desired sweetness).
Spoon the yogurt mixture into the molds, about half way up. Spoon the strawberry puree the rest of the way up, leaving 1/4 inch space at the top.
Cover and insert popsicle sticks. Freeze for 4-6 hours before enjoying.
