These super simple but super refreshing lime popsicles require only a handful of ingredients and minimal prep - just what you need in the warmer months. They are perfect for summer, or just any day when you need a refreshing treat!

Lime Popsicles Recipes

As a fully grown adult, one of my favourite refreshing treats in summer is popsicles. I’m not one bit ashamed to admit it. They do such a great job at cooling you down, in a very yummy way! And I will say, there is absolutely nothing wrong with store-bought popsicles, but there is just something about homemade popsicles that are so beautiful; just like these homemade lime popsicles recipes below!

These chilling treats use healthy, quality ingredients, which make you feel so good about what you are eating. You control what goes into your treat. They are light and refreshing, and totally does the job! Freshly squeezed lime juice is the main ingredient in each of the flavours that you’ll find in this recipe. Lime can be paired with so many flavours, so I encourage you to experiment and change something up if you’d like.

There are 3 popsicle recipes included in this post. Juicy Lime is basically frozen limeade. So if you’re a fan of limeade, you’ll love this one! Coconut Lime is creamy and coconut-y, with the perfect amount of lime; feels like I’m on a tropical island eating this one. And last, Strawberry Lime is fruity and refreshing; the strawberry and lime go so well together, with a beautifully creamy taste/texture from the yogurt.

Ingredients Needed

Here is a list of the simple ingredients you will need to make these refreshing lime popsicles!

Lime juice: lime juice is the main ingredient in all 3 of these popsicles. I strongly recommend using freshly squeezed lime juice and not the bottled lime juice found in the grocery store. It actually makes a difference – using freshly squeezed juice will make the popsicles taste so much better!

Water: combined with sugar, helps to make the juicy lime (limeade) popsicles.

Sugar: sweetens up the limeade popsicles perfectly.

Coconut milk: this ingredient adds the perfect creaminess and coconut twist to the coconut lime popsicles. It is utter perfection.

Condensed milk: this sweetens the coconut lime popsicles, which I think is the perfect sweetener for this popsicle. It adds to the creaminess of the popsicles and just pairs really well with the coconut milk.

Strawberries: adds a beautiful fresh and fruitiness to the strawberry lime popsicles.

Vanilla Greek yogurt: adds the perfect vanilla, creamy texture with the perfect tang that adds to the lime popsicles flavour.

Honey: this is optional. If you find your strawberries aren’t sweet enough or the yogurt isn’t sweet enough, add honey.

You will also need a popsicle mold of your choice. I use this popsicle mold for my homemade popsicles.

How to Make Lime Popsicles

These homemade lime popsicles are unbelievably quick and easy to make. The hardest part is waiting for them to freeze! Here are some easy-to-follow instructions to help you out:

Juicy Lime Popsicles

Start by heating the water and sugar in a saucepan over the stovetop just until the sugar dissolves. This step just helps the sugar to dissolve quickly without having to mix a bunch. As soon as the sugar has dissolved, remove from heat and pour into a heat-proof jar/container. Allow this mixture to cool.

While that’s cooling, it would be a good time to wash your limes and get them juiced. Once the sugar-water mixture is cooled, add the freshly squeezed lime juice and mix together well.

Pour into popsicle molds, leaving about 1/4 inch space at the top. Cover and insert popsicle sticks. Freeze for at least 4-6 hours before enjoying. Makes approximately 6-8 popsicles. 

Coconut Lime Popsicles

This coconut popsicles recipe requires the least work. Simply blend the coconut milk, sweetened condensed milk, lime juice, and vanilla extract together for 5-10 seconds.

Pour mixture into popsicle molds leaving about 1/4 inch space at top. Cover and insert popsicle sticks. Freeze for 4-6 hours before enjoying. Makes approximately 4-6 popsicles. 

Strawberry Lime Popsicles

Start by pureeing the strawberries in a blender. Taste the sweetness level. If the strawberries aren’t sweet enough for your preference, add honey, 1 tbsp at a time and blend (personally, my strawberries weren’t sweet enough so I added 2 tbsp of honey). Set aside.

In a bowl, thoroughly combine the lime juice, vanilla Greek yogurt, and honey (if needed). Add honey if the mixture isn’t sweet enough to your liking (I added 2 tbsp honey to my mixture).

Spoon the yogurt mixture into the molds, about half way up. Spoon the strawberry puree the rest of the way up, leaving 1/4 inch space at the top. 

Cover and insert popsicle sticks. Freeze for 4-6 hours before enjoying. Makes approximately 4-6 popsicles. 

Variations/Substitutions/Tips

  • to make the Coconut Lime popsicles vegan, switch the sweetener to maple syrup or your choice of vegan sweetener.
  • to make the Strawberry Lime popsicles vegan, use maple syrup instead of honey and a vegan yogurt instead of Greek yogurt. You can also use coconut milk instead of Greek yogurt.
  • liquids expand as they freeze, so it is a good idea to always leave that bit of space at the top when pouring mixtures into the popsicle molds.

Storage

Once popsicles are completely frozen, remove from molds, wrap really well with plastic wrap, and store in a freezer bag. These will last 3-6 months in the freezer, as long as they are wrapped properly.

Frequently Asked Questions

Any ideas for other flavour combinations that pair well with lime?

There are so many and I encourage you to experiment. Here are a few ideas off the top of my head. Instead of strawberries, try cherries, blueberries, avocado, or mango. For the Juicy Lime popsicles, try adding the juices of other citrus fruits, such as lemon, grapefruit, or orange. Lastly, although I’ve never personally tried it, I’ve heard ginger pairs well with lime.

How can I prevent ice crystals from forming on the popsicles?

This can be prevented, or at least decreased, by using some type of sugar in the recipe. All of these recipes include sugar, except strawberry lime, which includes honey as optional. Sugar helps to prevent these crystals from being formed. So although honey is optional in the strawberry lime recipe, I do encourage to include it for this reason. You shouldn’t have a problem with ice crystals forming if you do that.

Juicy Lime

  1. In a small saucepan over medium-high heat, mix together the water and the sugar, just until all the sugar has dissolved. 

  2. Remove from heat and transfer to a heat-proof jar. Allow to cool. 

  3. Once sugar-water mixture is cool, add the lime juice and mix until thoroughly combined. 

  4. Pour into popsicle molds, leaving about 1/4 inch space at the top. Cover and insert popsicle sticks. Freeze for at least 4-6 hours before enjoying. 

    Makes approximately 6-8 popsicles. 

Coconut Lime

  1. Blend the lime juice, coconut milk, condensed milk, and vanilla extract together for 5-10 seconds. 

  2. Pour mixture into popsicle molds leaving about 1/4 inch space at top. Cover and insert popsicle sticks. Freeze for 4-6 hours before enjoying. 

    Makes approximately 4-6 popsicles. 

Creamy Strawberry Lime

  1. Puree the strawberries in a blender. Add honey, if needed, to your desired sweetness and blend until combined. Set aside. 

  2. In a bowl, mix together the lime juice, vanilla Greek yogurt, and honey until combined (add honey to your desired sweetness). 

  3. Spoon the yogurt mixture into the molds, about half way up. Spoon the strawberry puree the rest of the way up, leaving 1/4 inch space at the top. 

  4. Cover and insert popsicle sticks. Freeze for 4-6 hours before enjoying. 

    Makes approximately 4-6 popsicles.
