Salsa Chicken Bake Recipe

Description

Salsa over seasoned chicken thighs, baked to juicy perfection.

Ingredients
  • 2 lbs (about 6 pieces) chicken thighs, skinless & bone-in
  • 1 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp oregano
  • 2 tsp cumin
  • 1 tsp paprika
  • 1 tsp chili powder (optional)
  • 430 mL salsa of choice (mild/medium/spicy/chunky)
  • green onions, thinly sliced (optional)
  • shredded cheese of choice (optional) (Tex Mex/cheddar/Monterey Jack)
Instructions
  1. 1

    Preheat oven to 375°F.

  2. 2

To the chicken thighs, add the salt, black pepper, garlic powder, onion powder, oregano, cumin, paprika, and chili powder (optional) and mix until chicken pieces are evenly coated with spices.

  3. 3

Place the seasoned chicken thighs into a baking dish just large enough to hold the chicken.

  4. 4

Pour the salsa over the chicken pieces.

  5. 5

Cover the baking dish with aluminum foil and place in preheated oven. Bake for 45-55 minutes or until a meat thermometer reads 165°F when inserted into the thickest part of the chicken.

  6. 6

Remove from oven and allow the chicken to rest for 10 minutes to allow the juices to redistribute.

  7. 7

Sprinkle with green onions (optional) and shredded cheese (optional). Serve with your choice of sides and enjoy.
