Salsa Chicken Bake Recipe
Being one of the easiest recipes ever, this salsa chicken bake recipe is one on repeat for me, or when I need something quick and easy. This delicious salsa chicken takes less than 5 minutes to prep before throwing it in the oven. Then, set it and forget it.
I personally love serving this chicken with Spanish rice and a huge dollop of sour cream. Beans are also the perfect side, too! I love using a tangy and chunky red salsa for this recipe because it adds so much more flavour and texture. You can use your favourite type of salsa, as long as it’s red salsa (made with tomatoes).
Key Ingredients
Chicken thighs: the key is using chicken thighs with the bone in. This results in juicier chicken that’s so much more flavourful than chicken breasts or any other boneless chicken.
Spices: the spices are what you typically use as taco seasoning so the flavour really complements the salsa.
Salsa: any salsa of your choice will do, as long as it’s red salsa (salsa made with tomatoes). Options includes mild/medium/spicy, chunky, fire-roasted, etc.
How to Make Salsa Chicken
This recipe is super easy! It doesn’t require much prep work and most of the work is done in the oven. Here’s how to make it!
Preheat oven to 375F.
Add all the spices (salt, black pepper, garlic powder, onion powder, oregano, cumin, paprika, chili powder) to the chicken thighs and mix until evenly coated. Transfer the seasoned chicken thighs to a baking dish.

Pour the salsa over the chicken thighs. Cover the baking dish with aluminum foil and bake in preheated oven for 45-55 minutes or when a thermometer reads 165F when inserted into the thickest part of the chicken.

Remove from oven and let the chicken rest for 10 minutes to redistribute the juices. This will ensure the chicken thighs remain moist and juicy. Sprinkle green onions and shredded cheese over the chicken and serve.

Frequently Asked Questions
Yes, you can use chicken breasts or any other boneless part of the chicken. I love using bone-in chicken thighs, however, because of the added flavour and juiciness.
Definitely. You can bake it, then cool, then place in an airtight container in the fridge for up to 4 days or freeze for up to 3 months. You can also marinate the chicken with the spices, cover tightly, and store in the fridge for 24-48 hours. Then when ready to bake, transfer to a baking dish, pour the salsa over, and bake as directed.
