Pumpkin Chili

If you love chili and are also a fan of pumpkin, you have to try this Pumpkin Chili recipe. It’s like classic chili, but with the most unique twist. The pumpkin adds sweetness, texture, and the subtlest pumpkin taste. As opposed to my classic Chili recipe, this Pumpkin Chili recipe has spicy sausage or any other spicy ground meat added to it. I think it complements the pumpkin perfectly!

This easy pumpkin chili is so delicious and a family favourite. You can top it with your favourite toppings that you’d normally use for classic chili, like sour cream, cilantro, lime, and avocado.

Key Ingredients

Ground meat: my classic chili recipe only uses ground beef but for this recipe I added spicy ground meat. I think this adds such a perfect twist and complements the pumpkin so well. You can use any spicy ground meat you have.

Spices: salt, black pepper, cumin, chili powder, cayenne, paprika, garlic powder, onion powder, and oregano give the chili its classic taste.

Pumpkin puree: adds a unique twist to a classic chili recipe. Also adds to the texture of the chili.

Tomatoes: adds a rich base to the chili.

Beans: my favourite beans are kidney beans and black beans but you can really use whichever beans you’d like.

Steps to Make Pumpkin Chili

Heat a pot over medium heat and add oil once hot. Add onions and jalapeno peppers and saute until softened. Add the garlic and cook for 30 seconds more.

Add ground beef and spicy sausage and cook until browned. Be sure to break the meat into smaller pieces. This will take anywhere from 7 to 10 minutes.

Once the meat has completely browned, add tomato paste and all of the spices listed and cook for 2 minutes. After 2 minutes, the tomato paste will have a deep aroma and the spices will be fragrant.

Add pumpkin puree and mix it in. Continue to cook this for about 5-10 minutes. This will help deepen the flavour of the pumpkin.

Add beef stock, diced tomatoes, tomato sauce, kidney beans, black beans, and brown sugar and mix thoroughly. Increase heat to high and bring to a boil. Once boiling, reduce heat to low, cover, and simmer for 1.5 to 2 hours, stirring occasionally. The longer you simmer, the deeper and more flavourful the chili will be.

Serve with your favourite toppings and enjoy.

Instructions

  1. Heat oil in large pot over medium heat. Add onions and jalapeno peppers; sauté until softened (about 3-5 minutes). Add garlic and cook for another minute. 

  2. Add ground beef and spicy turkey sausage and cook until completely browned, breaking the meat up into smaller pieces (about 7-10 minutes). Drain excess grease if needed. 

  3. Add tomato paste, salt, black pepper, cumin, chili powder, cayenne, paprika, garlic powder, onion powder, and oregano. Stir and cook for about 2 minutes. 

  4. Add pumpkin puree and mix into the meat mixture. Cook this down for about 5-10 minutes. 

  5. Add beef stock, diced tomatoes, tomato sauce, kidney beans, black beans, and brown sugar. Stir well, increase heat to high, and bring to a boil. 

  6. Once it reaches a boil, reduce heat to low, cover, and simmer for 1.5 to 2 hours. The longer, the better the flavour. 

  7. When chili has cooked for 1.5 to 2 hours, taste and adjust for salt and/or brown sugar. 

  8. Top with any of your favourite toppings, such as sour cream, cilantro, shredded cheese, diced avocado, sliced jalapeno peppers, and lime wedges. Enjoy!
